This came up at a game Saturday. Can a character with Superior
Celerity and a maneuver from another source (quicken sight) maneuver
to long, strike for 1R (undodgeable) with Projectile at superior and
then strike for 1R (undodgeable) without playing another Projectile
(the player claimed that the as above, with an additional strike
permitted it).

No. You have to play a strike to use that strike.
