What happens when a vampire with +1 hand damage has an Erosion played on
him? Does it make their hand damage 0+1 or just 0?
Also, what happens when a vampire with Erosion played on him plays
Torn Signpost?

0+1 is correct. (I believe, don't quote me on it).
Jyhad tends to work of a base (examples: base bleed 1, base hand strike
1) and have modifiers to that (+1 bleed, +1 hand damage)

I would say TS overrides Erosion. After all TS makes a base of 2/3
(unless its changed in VTES text)
