Yes, it does prevent S:CE. While Immortally Grappled (or Immortally
Grappleing), a minion may not:
-Dodge
-S:CE
-Use weapons (even weapons that are based on hand damage. Thus no Sengir
Dagger, Bastard Sword, Brass Knuckles, or Sword of Judgement while
Immortal Grapple is in play)
-Use any strikes that are not hand strikes.
This pretty much prevents the use of Thaumaturgy (for example) and any
other non Potence hand strike. While a minion is Immortally Grappled, it
may:
-Use hand strikes
-Use Pot modifiers on hand strikes (like Torn Signpost and Undead
Strength)
-Use any other modifiers to hand strikes (like Wolf Claws or Lucky Blow)
-That is all.
Having access to an ample supply of Immortal Grapple will enable
incredibly useful combat decks in the face of (the very common) heavy S:CE
defense and will scare your friends. Get 7 or 8 and show those Majesty
punks a thing or two...

Nope. Immortal Grapple is played BEFORE strikes are chosen, but after
the choose maneuver phase.
If someone declared his strike, it is too late to play IG.
But: Yes, both minions may not play S:CE or Dodge as soon as IG is
played.

Damage done by retainers is never from a strike, since retainers
aren't minions and therefore have no strike.
While Immortally Grappled, you Wolf Companion can still bite
for 1, your Murder of Crows can still peck for 1, your Carrion
Crows (not a retainer at all) can still peck for 1 or 2, and
the Ghoul Retainer can still inflict damage with any weapon that
you aren't using.

your ghoul retainer pick up that chainsaw, and have a go, or is
he restricted to just hand strikes too?
