I was wondering: How much damage does a weapon (sawed- off shotgun, for
example) do if it doesn't say? Does it just do 1, or is there some other
way to determine this? I would really appreciate it if whoever reads this
would respond, because it could greatly affect our games.

There are no weapons which do not say how much damage they do.
The Shotgun does 3 damage, usable at range (or at close), once per combat.
It may not be used for a strike more than once per combat.
