I probably missed the ruling but can multiple additional strike cards
be played in a single round, either say, two blurs, or one blur and one
nimble feet ( at the superior ) ?

Because the rules say so. The same reason you can't play the same
action modifier more than once with the same minion on a single action.

If your vampire has superior Celerity, she gets the chance to do
a second strike fairly routinely, and a third strike even! That's a
*significant* advantage. Even superfast vampires can't go faster than
the speed of light. Everyone has limits.

For reasons of game balance. Yes, vampires with Celerity are faster than
other vampires, but there is a limit, in V:tM as well as V:tES.
