The action retains all the accumulated stealth, the previous intercept is lost.

All weapons and vehicles are equipment, but not the other way around. Kinda
like that rombus-square thing.

Stealth is never cancelled. Stealth gained will remain throughout the action
(until it either resolves successfully or is ultimately blocked by a vampire
with at least as much intercept as the current stealth level of the action).
pg. 28:
"Increased stealth ... return[s] to normal *after* the action is resolved."
(Emphasis mine)

Everything with an equipment symbol on it (the little gun) is Equipment.
Some Equipment are Weapons.
Some Equipment are Vehicles.
Some Weapons are Melee Weapons.
Some Weapons are Guns.
The Zip Gun is also equipment, weapon, and gun (card text).
You may destroy any of these with a strike: destroy equipment.
You may only steal/destroy the equipment which are also Weapons
with a strike: steal/destory Weapon.

First, in case of stealth vs intercept, if you have a vampire intercepting some
action and this vampire fails to intercept and another one wants to attempt to
do so, do all the stealths and intercepts played so far cancel each other, or
does the vampire continues his/her action at the accumulated stealth?

To be clear, the intercept is retained until the action is over as well.
A attempts a bleed
B blocks
A goes to +1 stealth.
B gets +1 intercept with Enhanced Senses (inferior)
A goes to +2 stealth.
C gets +2 intercept with Enhanced Senses (superior) and blocks.
At this point, B still has +1 intercept.
A and C get into combat.
A takes the Form of Mist, continuing the action at +3 stealth (total).
B gets +2 intercept with The Spirit's Touch
B gets +3 intercept with Eagle's Sight and blocks.

The stealth affects the action minion, so it carries over. The intercept
affects the blocking minion, so the first minion's intercept doesn't help
the second.

Vehicles and weapons are subcategories of equipment. Steal/Destroy
equipment can get any of them. Steal weapon (Fast Hands) can only steal
weapons and does not affect other equipment, including vehicles.

Stealth and intercept remains on the minion until the action resolution
is complete. So the vampire continues his action at the accumulated
stealth.

Everything (here) is equipment. You can steal/destroy vehicles
as well as guns with a strike: steal equipment or a
strike: destroy equipment.
