You only get the first press from Undead persistence. The rest must
come from other sources (Trap, Appolonius, Hawg, Dead-End Alley, etc).

The vampire must be burned if it cannot spend the blood during the untap.
An empty vampire isn't necesarily burned when the card is played - he could
get into combat and steal some blood, for example, before his next untap
phase.
