I'm sure this question has come up before, but I have to ask it. It's of
vital importance in games played here all the time.
Can you take blood off of more than one Investment at a time? Assume no
master card has been played for the turn.
I think you can; there's nothing on the cards that say you can't. My friends
don't agree with me, especially when I have five Short/Protracted Investments
out and start collecting from all of them at the same time.

Drawing pool off of ONE investment replaces the play of a Master card during
your Master Phase. Unless you have Rumors of Gehenna or Anson in play you may
only draw from one investment per Master Phase because you only have one card
play during each Master Phase.

The card says "instead of playing a card, you may take a blood"
You can only get one blood for each card you don't play.
This typically means only one blood from investments per turn,
but could be two (one from two or two from one) if you have
Anson or Rumors of Gehenna.
