Do you flip a coin during that strike resolution since the opposing
minion's strike is already dodged and therefore would not resolve
"against this vampire" in the first place?

OBF: Only usable before range is determined. When resolving each strike
against this vampire, flip a coin. If it's tails, the strike has no
effect on this vampire. This lasts until heads is flipped or combat
ends. A vampire can play only one Gemini's Mirror at superior each
combat.
Clarifications and Rulings
Gemini's Mirror doesn't protect the minion's equipment, retainers, or
any other cards on him. Just him (and his blood). [LSJ 20031118]

If the opposing minion makes a strike against the vampire (like a gun
strike or a Sewer Lid strike or a Theft of Vitae strike), yes.
If he doesn't (he uses hands uselessly at long range or strikes against
a retainer or whatever), then no.
The dodge doesn't keep the opposing minion's strike from resolving --
it just protects the dodger from the effects of the strike.

Ok, this is only conjecture, but from the rulebook: 6.4.5.
"A dodge [..] protects the dodging minion and his possessions from the
effects of the opposing strike."
Would imply that the strike does resolve, but the minion is protected
from it. My best guess would be that is enough to trigger Gemini's
mirror.
However, in clarifying text under Combat Ends, it says: "since dodge
only cancels effects that are directed at the dodging minion."
Actually giving the idea that stikes/effects are actually canceled
instead of resolving without effect. As this is only clarifying text,
I'd personally go with the first option.
Guess this is one for LSJ ;)
So like If the other vamp is playing a catotonic fear OR obliette you
would not take the damage or lose the blood but they would still end
combat.
