Yes. Untapping all your cards is the first thing you do in your
untap phase.

Charnas deals damage to the minion when the minion untaps. Whenever
the minion untaps. The damage is not an event to be ordered. It simply
occurs when the minion untaps. (card text).

Any damage that a vampire cannot heal will send the vampire to
torpor, yes.
