Pulled Fangs has text which says to count up all the damage done during a
round. This has been ruled to be counted during the press step - not an
illogical ruling, IMHO. The other two (Amaranth and Taste) are played as
implied by card text.

Just between the strike resolution and the press step *if* no one has any
additional strikes. Taste can be played after any strike resolution phase
(that is, after any pair of strikes have resolved). Playing it early may
net you less blood, but it may also keep you out of torpor.

Yes. Amaranth is played whenever someone is going to torpor - be it from
strike resolution, Press Step (pulled fangs), start-of-round (Weather
Control) or what have you.
Not that Amaranth *cannot* be played in response to a vampire going to
torpor as the result of Rotschreck, since Rotschreck ends combat before
placing the vampire in torpor (and Amaranth must be played during combat,
as the vampire goes to torpor).
