I've started playing with a group that has somehow gotten the
idea that you can only play one of a given card during the
period that's appropriate for it. Probably by extension
from the limits put on action modifiers, reactions, strikes,
and additional strike cards.
What in the Jyhad/VTES rules or rulings can I point at to
convince them that it *is* possible to play more than one
Flash or Form of the Ghost during a maneuver phase, or
more than one Indomitability or Skin of Rock during
damage prevention? Or that it's possible to play 2
Fists of Death during a given combat?
(Or have I missed something?)

Sadly, I don't think that it specificaly says you can stack cards, but it
specificaly says what you CAN'T stack.
Somewhere in the rule book (I lost mine long ago) there is a section that
says "only one of each Action Modifier or Reaction may be played by a
minion in each action..." or something like that. Your group mates are
correct that only one of each _Action_Modifier_ or _Reaction_ may be
played during each action, but it says nothing about combat cards, which
you can play as many as you want per combat, with the exception that you
can't use manuvers to cancel your own manuvers and you can't use presses
to cancel your own presses (i.e. no wasting cards just for the sake of
cycling them). You also may only play ONE card that provides aditional
strikes each combat round (you may play another one if you press and have
another round of combat).
As only one of each Action Mod may be played per action, if some Malkavian
tries to come bleed you, he can use 1 Lost in Crowds, 1 Faceless Night,
and 1 Cloak the Gathering (but that is a weird one, as his friend can also
use one to up his stealth, as the same MINION is not using more than
one...), but no more of each type in that action. If some Toreador is
trying to block, she can use one each of Enhanced Senses and Spirits Touch
to try to stop him. If, our Torador friend manages to intercept and they
get into combat, she can use flash to manuver to long range, and then use
flash again to manuver to long range after the Malk manuvers to close.
She could then strike with Undead Strength for 3 hand damage and use 2 or
3 Skin of Rocks to stop all the damage that is hitting her (she is one
buff Toreador...), and then Blur (once this round) to strike twice more,
each time using Undead Strength again.
As to some of the specific cards you pointed out, in combat, you can use
all the Flashes or Fake Outs to manuver as you need, you can play 2 or 3
Fists of Death if you want (it is +1/+2 damage, as opposed to Torn
Signpost which gives you 2/3 base hand damage. Play Torn Signpost and
then stack a Fists of Death on top of it and hit for 5 hand damage every
strike! With Undead Strength you can hit for 7! Woo Hoo!), play as many
Gleam of Red Eyes to press as you need and you can play as many Skin of
Rocks as you need to stop all the damage that is coming at you. On the
other hand, you can't use 6 Lost in Crowds to get +12 stealth when you go
to bleed someone with Ozmo for 7.

Unfortunately, there's nothing in particular you can point to, since we
tend not to include "yes, you can do this" reminders in the rulebook.
Basically, there are special rules for certain card types, such as Action
Modifiers, that prevent you from doubling them up. If the rulebook doesn't
mention that a card type is restricted, then you can double up the card as
appropriate. It might help to point out that there is a rule prohibiting you
from stacking additional strike cards/effects, but no such rule mentioned
for things like damage prevention.
