I am not sure about the result but here's an example of
something I don't understand to well...
Minion 'A' attempts bleed.
Minion 'B' blocks.
'A' as acting minion plays Form of Mist (superior) 'Strike: combat
ends, this action continues at +1 stealth'
'B' can't play a stike card, so instead plays 'Psyche'. Since both
combatants are essentially still ready, what happens?

Simple, the combat starts again, unless the person is using the psyche
to press. Your minion escaped the first combat, but a new combat is
beginning. If minion A has another form of mist at the end of the
second combat then he can continue his/heraction (unless minion B has
another pshcye....).

If it's the normal version (a press), you can't use it. If it's
the superior version (which is the real meat of your question), I would
say that you get to fight again. However, unless the combat resulted in
the Mister going to torpor, she'd probably get to keep going, too
(combat isn't necessarily mutually exclusive continuing the action I'd
think).
I suppose a second Form of Mist in this new combat would give
the action another +1, but I'm not sure about that.

Form of Mist would have precendence, in my opinion, allowing the action to
continue unles re-blocked.
Additionally, it could be that:
Psyche will still have its effect, allowing the vampire to re-start combat
with he Mist'ed vampire immediately - after which the action will continue
at +1 stealth as per Form of Mist (unless the Mist'ed vampire was put into
Torpor).
Reasoning: Form of Mist continues the action even though blocked once,
and simple combat has no bearing on an action (which is why entering combat
does not tap a minion - only acting and blocking tap a minion), so it
would continue even with an all-out Psyche-style "press".
But, there are no mechanisms for preventing Psyche (or Fast Reaction, for
that matter), so Form of Mist would not negate the effects of such cards.

Letting the cards text slide a little, and replacing it with a "logical"
interpretation of what's happening (a favorite among some play groups,
but this won't hold water at WotC):
Psyche: Usable only after you have finished combat where both combatants
are still ready. The action is re-blocked and another combat ensues.
If the Psyche'ing vampire was the acting vampire, this change has no effect.
If he was the blocking vampire, then he blocks tha action again. In the
case that the opposing vampire had ended combat with Form of Mist, the
Psyche'ing vampire would have to boost his stealth by one to re-block.
This interpretation digresses entirely too much from the card text and the
game mechanincs for my taste, but it is the fairest and most "realistic?"
solution that I can think of.
