To clarify - as the acting minion, you *choose* your strike before the
opposing minion chooses a strike. But both minions choose their respective
strikes before either strike resolves.
Strike resolution order is not determined by looking at who is the acting
minion. Strikes normally resolve simultaneously, although S:CE ends combat
immediately when it resolves (before any other strike resolution effects
take place), not when it is announced.

Correct. DotB damage is done at the end of the round, and the round ends
when S:CE resolves.
