Zoe has Anima Gathering targetting Samantha.
The unfortunate prey of this combo plays From a Sinking Ship and takes
control of Zoe (permanently).
Since Anima Gathering has now come under the control of a new
Methusaleh (by the minion card rule) can or must the new Controller
retarget the effect of Anima Gathering to one of their own minions?
If not, does Anima Gathering stop giving bonuses to Samantha because
she is not "another minion you control" ?

No, you choose the minion when you play the card.

No. The minion must be one you control when you play Anima Gathering.

The new controller could simply choose to untap Zoe (thus burning Anima
Gathering) though, yes?
Any other opinions on this? Or is that official?
I can follow the logic, but it still seems odd to have Anima Gathering
give a bonus to a minion you don't control.
Yes, but it's like having Zoe equipping with the Sword of Troile from
Black Cat - She can't equip it from your hand, but if it's already in
play the clan restriction doesn't matter.

"This" without context is pretty lonely.
It's official.
Effects set at the play of a card are not reset unless card text says
so.
