What happens when the vampire the rack 'points to' is grave robbed to
another methusalah? May the controller of the rack choose a new
'target' or does the rack still work for the same vampire, but remain
under the first methusalah's control?

The Rack only changes its pointer when the Rack card changes
controllers. If the pointer points to a dead vampire, it doesn't do
anything. From this, my guess would be that it would keep pointing to
the same vampire even if the vampire moved.

I see no reason why the Rack would stop feeding a vampire which had
changed controllers, but will check on that just in case.
