***Put the Diary in play, or add a counter to one in play.*** When a
unique minion in play is burned, add another counter. While this card
has seven or more counters, Giovanni get [NEC] and may take a +1
stealth action to put a minion from any ash heap into play to
represent a wraith ally with 2 life, 0 strength, 1 bleed and +1
stealth.
Emphasis mine. Does this mean you can add multiple Diaries into play,
which will then have a cumulative effect?
As it states put the Diary in play OR add a counter, it implies a
choice. Nowhere does it state I may not put it inplay a second time,
and as it is not unique there is no limit to this.
If the answer to the above is yes, would this mean that multiple
Diries with 7+ counters each would give +x stealth etc to each wraith
where x is the number of 7+ counter Diaries in play?

Looks like yes.

Nothing about the card text could possibly imply this.
I'd say that the only "cumulative effect" is that a single Giovanni can
repeat the action to dig up a wraith once per Diary.

IANLSJ, but I'm with Jozxyqk on this. Once you have the 7 counters on
two different Diaries, you take the Action to put the Wraith into play
with those stats. Or you could take the Action to recruit the exact
same Wraith from the other Diary.

Correct. Meaning the +1 stealth doesn't accumulate ("stack") on each wraith.
The effect is not "Wraith allies get +1 stealth".
The card lets you create a wraith with 2 life, 0 strength, 1 bleed, and +1 stealth.
You may create that wraith with Diary A or with Diary B. A wraith created by the
action provided by Diary A won't be affected by the life, strength, bleed, or
stealth that would be given to a wraith created by Diary B.
Similarly, a vampire with 2 Haven Uncovereds on him can be rushed via Haven A or
Haven B, but the rush provided by Rush A is at +1 stealth, not +2 stealth; the
stealth provided by Haven B for its action cannot be used on the rush action
provided by Haven A.
