You are pretty much correct. Dodge negates the effects of the opposing
minion's strike on your *minion* (I believe, though IANALSJ, that if the
opposing minion is applying damage to a retainer -- using ranged damage at
long range -- your dodge does nothing to help out your retainer.) And no,
dodge does *not* cancel Strike: Combat Ends.

This is a pretty good question. I *think* that the reacting vampire still
declares second...just simply has the benefit of having his strike resolve
first. Which *can* make the Assamites nasty with first strike aggravated...
