Ummm, the same way I deal with other decks.
Intercept, Bleed Deflection, Vote denial, Prevent/S:CE or superior
combat.
I don't think metagaming against Anarchs specifically is really
feasible nor necessary.

hosers against indies or anarchs than to anticipate what sort of decks
are likely to be common.
One is going to be Anarch Revolt. AR is a real pain if you aren't
prepared for it. I'm thinking of running more Suddens over Washes as
I don't want to Wash someone into a second AR. Similar in certain
respects in that they both disrupt normal play is going to be Constant
Revolution. Where AR can be countered with casual anarchy from
Convert deck thinning, CR requires doing something about, at least
there's likely to be help, especially if the other anarch decks want
to drop their own copies.
Another is going to be a lot of bleed out of nowhere. This isn't so
bad on a strategic level since it's hardly new, just being done
differently. On the tactical level, though, people are going to need
to be more careful. Archon Investigation is something I'd be inclined
to play more with.
Various trick combat is going to come up in any meta where people like
combat. Potence should be hot as Immortal Grapple allows for clotting
opponents reliably and the natural combinations with Obtenebration and
Presence (otherwise known as Hell-for-Leather and Power of One). More
combat ends could be reasonable just because the decks will be
sufficiently complicated that IG may not show.
Some of the most interesting metagaming should come out of the anarch
mirror. If you aren't getting much out of P:LA, there are now reasons
to leave it out all together. Anarch Salon can be helping the
bleeders more than it does you, not that the card was ever that good
in the first place.
I'd expect a lot of early decks to be glass cannons that are too prey
oriented, which can be frustrating on a table management level or just
if you get particular seating. The anarch bleed decks are likely to
be burning blood like mad, which can make for some interesting
metagaming if you are inclined toward blood denial, Cryptic Mission,
or whatever.
While probably unlikely almost anywhere, because of Convert and that
the new cards aren't bad, the coming meta could be all anarch. In
such a situation, I'd be running a lot of bounce.

I actually believe there will be fewer Anarch Revolt decks very quickly.
With so many folks taking their Anarch decks out for a spin, it won't
be unreasonable to find 1 or 2 other Anarch decks at the table, often
one of them being your prey. That will screw you for sure, as you are
hitting your x-table ally, and your prey is thanking you.
I also feel that playing with Anarch Converts in your deck that might
otherwise be non-anarch could be good for metagaming: Bring the AC into
play and don't burn him. He is now a unique vampire, and no one else
can use him for his special. They can contest with you, but that's
probably workable.

deck + boosters for the Twilight Rebellion pre-release. There wasn't much
intercept in those booster packs :)

I hate Fiendish Tongue, and pretty much refuse to use it now (I think
I have 1 Tzimisce deck with them still in, but other than that I
don't). I had a Miguel Santo Domingo deck with Fiendish Tongue, heaps
of hard and fast bleed with a bit of combat to back it up - lots of
weenie sabbat Potence guys and Miguel. Then a player xtable played
Fall of the Sabbat. Every Fiendish Tongue became a dead card, and
Miguels special no longer applied. I pulled the deck apart and have
been cursing my Fiendish Tongues ever since.

You can't always guarantee you'll have the Black Hand minion. Mariano
was in the deck IIRC. And it doesn't matter how often I see it, that
game was a dog poo sandwhich. I ain't having that happen again to
me. Call me crazy, but Computer Hacking is far safer.

A guy in my local playgroup ran a Tzimisce fiendish tongue deck using Plasmic
Form and changeling for stealth/+bleed and a fairly dangerous intercept/combat
module with zero wakes. It was a nightmare to play against as he was literally
bleeding for 2 or 3 at stealth with 3-4 minions every turn and still had them
untapped at the end of each turn to dragonbreath you to torpor or flick
bleeds. It was an extremely reliable deck and managed to make two consecutive
tournament finals.
