I know with Celerity, there's card(s) that allow you to strike twice, at
least one of which is First Strike. Can you use a First Strike to damage
an opponent, and then use the second to S:CE, and take no damage
yourself?

Nope. A S:CE negates any strike that was done simultaneously to it.
Strikes earlier in the combat are not negated. As you may remember,
strikes resolve before additional strikes are declared.

This is correct.

I think you have a misconception on how first strike works.
You get a strike, then your opponent gets his strike, then you
go on to additional strikes. Thus your second strike (the S:CE)
would not be played until after your opponent has played and
resolved his initial strike. First strike only allows you to
resolve your strike before your opponent, it does not allow you
to squeeze in 2 strikes before your opponent gets his strike.
This is mostly significant when your strike sends your opponent
to topor.
