Avoids it. Combat ends before strike resolution, which is when Carrion Crows
would have dealt damage.

The stolen blood is moved from the opponent to him when it resolves, before
the "heal/prevent damage" phase. He can use the stolen blood to heal damage
or to pay for cards that prevent the damage (like Skin of Steel).

If the opposing minion burned all of his blood before strike resolution (e.g.,
by paying the cost of a strike card or a strike modifier - like Burning Wrath
or Claws of the Dead), then your minion gets no blood.

It is not "instantaneous" in that the effects of the strike don't occur
until strike resolution. But the effects of the strike do occur before the
"heal/prevent damage" phase.
