Am I correct in assuming one cannot make use of the Chantry
if one has played a master-out-of-turn card for the
unsubtle reason that the m-oo-t card replaces the entire
next master phase.
This is not how the card was meant, of course. It meant to
be 'during the untap phase' not 'during the master phase'
but, since it didn't get printed that way, you can't use it
after a m-oo-t, right?

Yes.

Why do you think the card should mean the untap phase? Vampires
in torpor untap (unless paralyzed) just like any other minion.
With Chantry, a torpored, untapped Tremere can become a ready,
untapped Tremere during the master phase.

Because it functions with the same mechanics as a Hunting Ground. HGs can
be used after a M-oo-t, why not the Chantry?

And this is a big difference between a topored (possibly tapped) Tremere
becoming a ready, untapped Tremere during the Untap phase? I think not.
The only difference is that you can't use your way after a M-oo-T. And
I can think of no reason for that.
